			<content:encoded><![CDATA[<p>Voglio aumentare la quantità di pesce che consumiamo settimanalmente in casa, e non voglio che il pesce venga consumato solo nel fine settimana, ovvero quando abbiamo la possibilità materiale di andare prendere quello fresco.</p>
<p>Per questo sto approfondendo il tema del pesce surgelato, partendo da quello in filetti, sto vedendo cosa si trova sul mercato e sto cercando di individuare ricette basate su questi filetti. Ovvio che, essendo delle ricette destinate ad essere preparate da me (o da Olivetta) al termine di una giornata lavorativa c&#8217;è bisogno che siano anche abbastanza rapide, e che non necessitino di ingredienti particolarmente inusuali.</p>
<p>Fortunatamente la <a href="http://saledolce.com/2009/01/15/merluzzo-alla-livornese/">cucina regionale italiana sembra essersi posta il problema molto prima di me</a>, e ricette con queste caratteristiche abbondano. Questo merluzzo alla anconatana ne è un esempio.</p>

<p>Ingredienti (per due persone):<br />
- due filetti di merluzzo (lessati in acqua bollente salata per 6 minuti)<br />
- 240 grammi di pelati<br />
- olio, cipolla, uno spicchio d&#8217;aglio<br />
- mezzo bicchiere di vino bianco<br />
- prezzemolo, sale e pepe</p>
<p>Scaldo l&#8217;olio in un tegame di terracotta, e rosolo  la cipolla per 5 minuti, unisco l&#8217;aglio e due ciuffi di prezzemolo e lascio rosolare ancora  due o tre minuti. Ora aggiungo il merluzzo e lo lascio rosolare 5 minuti per parte.</p>
<p>Aggiungo i pomodori, appena la salsa cominicia ad addensarsi, regolo di sale e bagno i filetti con il vino bianco. Lascio sul fuoco ancora 10 minuti, poi passo nei piatti il pesce accompagnato dal suo sugo.</p>

<p>Ingedienti (per i filetti):<br />
- filetti di cernia infarinati<br />
- circa 40 grammi di burro<br />
- un rametto di rosmarino<br />
- il succo di un limone</p>
<p>Come per una qualsiasi &#8220;<a href="http://saledolce.com/2009/01/11/filetti-di-cernia-alla-mugnaia/">mugnaia</a>&#8220;, infarino i filetti, facco sciogliere 40 grammi di burro in una padella bella larga, e rosolo dolcemente i filetti tre minuti per lato.</p>
<p>Appena dorato il secondo lato, bagno i filetti con il succo di un limone spremuto, leggermente allungato con del vino bianco secco.</p>
<p>Completo la cottura, facendo restringere il fondo a fuoco vivace. Quando la quantità di liquido si è dimezzata, rigiro i filetti nel fondo perchè siano ben bagnati e aggiungo degli aghi di rosmarino.</p>
<p>Io ho accompagnato questi filetti con un contorno che a me piace molto, ovvero dei <a href="http://saledolce.com/2008/11/16/pate-di-cannellini/http://saledolce.com/2008/11/16/pate-di-cannellini/">fagioli cannellini conditi con emulsione di olio e limone, sale e aglio sminuzzato</a>.</p>

			<content:encoded><![CDATA[<p>In questo periodo sto usando molto i filetti di pesce surgelato, pratici da gestire, veloci da portare in tavola, poco impattanti sul portafogli ma di grande soddisfazione per il palato. Così sto raccogliendo qualche preparazione da condividere su saledolce. Questo merluzzo alla livornese, è un ottimo esempio.</p>

<p><em>ingredienti (per due persone)<br />
200 grammi di filettodi merluzzo surgelato<br />
uno spicchio d&#8217;aglio<br />
prezzemolo<br />
mezzo bicchiere di vino bianco secco<br />
olio<br />
200 grammi di pomodorini pelati<br />
sale e pepe<br />
</em></p>
<p>Lesso per sei minuti il filetto di merluzzo in acqua bollente salata. Poi schiaccio l&#8217;aglio e lo faccio rosolare in padella, cuocio i filetti a fuoco vivo per due minuti e poi bagno con il vino bianco, lascio evaporare quasi completamente e aggiungo il pomodoro. Regolo di sale e pepe, e lascio cuocere 10 minuti. Nei piatti aggiungo del prezzemolo tritato.</p>

			<content:encoded><![CDATA[<p>Ogni volta il filetto di merluzzo surgelato mi stupisce, lo considero una opzione disgraziata per quelle situazioni in cui non c&#8217;è niente ma mangiare, e ogni volta ne esce fuori un piatto gustoso e per certi verso inatteso. Questi agili spiedini ad esempio, sono una ricetta davvero sorprendente.</p>

<p>Lesso il tipico filetto di merluzzo da 100 grammi  per 5 o 6 minuti in acqua bollente, dopo averlo lasciato raffreddare  lo divido in 4 bocconcini più o meno quadrati. Insaporisco ogni bocconcino un un pizzico di sale e una macinata di pepe, poi lo avvolgo in una fetta di pancetta.</p>

<p>Ora posso assemblare gli spiedini:una mezza fetta di baguette, un bocconcino avvolto, una foglia di alloro, e così via. Gli spiedini vanno in forno a 200 gradi per 20 minuti, su una teglia coperta di carta da forno. Prima della cottura un filo d&#8217;olio, al momento del passaggio nei piatti &#8230; ancora un goccetto.</p>
