			<content:encoded><![CDATA[<p>E&#8217; passato davvero troppo tempo dall&#8217;ultima volta in cui ho proposto un primo: oggi voglio rimediare, perchè mi piace tantissimo preparare pasta, e poi sono proprio tante le situazioni in cui un primo sfizioso salva la giornata. E questo vale sia per il cuochino che per il blogger.</p>
<p>Ho colto l&#8217;occasione perchè ho notato una curiosa ricetta su <a href="http://www.mondadori.it/Il-Gruppo/Periodici/Italia/Sale-Pepe">Sale&amp;Pepe</a> di questo mese, nella quale compare il gin. Uso spesso la <a href="http://it.wikipedia.org/wiki/Vodka_Moskovskaya">vodka</a> in cucina, l&#8217;idea di usare il gin mi interessa molto come variazione. Ho usato del <a href="http://www.tanqueray.com/">Tanqueray</a> ma ci sono alternative più a buon mercato e con qualche grado alcolico in meno: questo potrebbe rendere meno spettacolare (ma anche meno problematico) il passaggio in cui sfumiamo con il gin.</p>
<p>Piccola nota di cronaca laterale: con questo post fa il suo esordio su saledolce.com la mia prima <a href="http://imaging.nikon.com/lineup/microsite/d90/it/">reflex</a>, strumento che non so ancora usare pienamente ma che spero possa produrre rapidamente dei passi avanti nella qualità delle immagini proposte sul blog.</p>

<p><em>Ingredienti (per due):<br />
- 180 grammi di conchiglione<br />
- 30 grammi di noci<br />
- 50 grammi di robiola<br />
- 70 grammi di panna fresca<br />
- un bichierino di gin<br />
- un cuore di sedano, con qualche foglia<br />
- 20g di burro, sale e pepe<br />
</em></p>
<p><strong>La preparazione</strong></p>
<p>Mentre la pasta bolle: lavo il sedano, e lo trito finemente, tengo da parte le foglie, che trito molto grossolanamente. Trito anche i gherigli di noce, li passo in padella insieme al burro e faccio rosolare, sfumo con il gin che lascio evaporare completamente: inclinando leggermente la padella di lato produco delle fiammate alquanto spettacolari.</p>
<p>Poi aggiungo panna e robiola, aggiusto di sale e lascio andare ancora un paio di minuti, fino a raggiungere una consistenza cremosa. Tolgo la padella dal fuoco.</p>
<p>Appena pronta, scolo la pasta al dente, la passo nella padella con la crema di robiola. Riporto la padella sul fuoco, unisco il sedano, una generosa macinata di pepe e faccio saltare un minuto prima di passare nei piatti.</p>

			<content:encoded><![CDATA[<p>Mi piacciono molto gli speciali &#8220;il meglio&#8221; di Sale e Pepe, perche&#8217; raccolgono intorno ad un tema un bel numero di idee tutte contraddistinte dalla fantasia e dalla fattibilita&#8217; tipiche della testata. In particolare ho messo le mani su un numero chiamato <strong>arrosti di <strong>primavera</strong></strong>, pieno di spunti per chi come me adora gli arrosti e quindi va un po&#8217; in crisi creativa con l&#8217;arrivo del caldo.</p>
<p>In particolare questo selezionato e&#8217; un arrostino di petto di pollo, una delle cose che con piu&#8217; facilita&#8217; abbiamo nel frigorifero e che piu&#8217; hanno bisogno di un po&#8217; di fantasia per acquistare un po&#8217; di gusto.</p>

<p><em>Gli ingredienti</em></p>
<p><em>- 2 petti di pollo<br/>- due spicchi d&#8217;aglio<br/>- una costa di sedano<br/>- un ciuffetto di prezzemolo<br/>- 6 filetti di acciuga<br/>- 20 pomodorini ciliegia<br/>- mezzo bicchiere di vino bianco<br/>- 2 foglie di alloro<br/>- olio evo, sale e pepe</em></p>
<p><strong>La preparazione</strong></p>
<p>Prima di tutto pulisco il sedano, lo faccio a pezzi e lo trito nel mixer insieme all&#8217;aglio, il prezzemolo, e acciughe. Quindi separo le due meta&#8217; del petto di pollo, eliminando l&#8217;ossicino. Apro ciascuna meta&#8217; a libro, farcisco con il trito che ho preparato, arrotolo un po&#8217; ad involtino e fisso con uno stecchino.</p>
<p>In un tegame scaldo un po&#8217; d&#8217;olio, e rosolo i petti su tutti i lati, regolo di sale e pepe,  aggiungo l&#8217;alloro in casseruola e. Bagno col vino bianco.<br/>Lo lascio evaporare, quindi copro e lascio andare a recipiente coperto per 20 minuti. Dopo 20 minuti aggiungo i pomodorini e laxio cuocere ancora 10 minuti.</p>
<p>Lascio intiepidire, affetto gli arrostini e li impiatto con la salsina di pomodorini.</p></p>

			<content:encoded><![CDATA[<p>L&#8217;aperitivo del momento in casa saledolce è sicuramente questo, in versione analcolica/infrasettimanale (&#8220;pomodoro condito&#8221;) o in versione full optional (&#8220;bloody mary in senso proprio&#8221;) nel fine settimana.</p>

<p>Non voglio riproporre la ricetta standard, da manuale, ma raccontare l&#8217;interpretazione personale che apprezzo di più. Le dosi sono per due:<br />
taglio a metà un bel limone succoso, mi raccomando uno gustoso, con la buccia bella spessa, e lo spremo.</p>
<p>Verso il succo nello shaker, aggiungo due pizzichi di sale (dolce di Cervia naturalmente) e una macinata di pepe nero. Nella versione alcolica aggiungo vodka in quantità pari al succo di limone, altrimenti passo direttamente al succo di pomodoro: ne stappo due bottigline e le aggiungo.</p>
<p>Mescolo bene, poi aggiungo due schizzi di tabasco, quattro gocce di salsa worcester e mescolo ancora con più energia. Passo nei bicchieri, spolvero ancora di pepe macinato al momento, guarnisco con foglioline di sedano e gusto.</p>

			<content:encoded><![CDATA[<p>Quasi sempre  la scelta della ricetta (e quindi il post di saledolce che ne potrebbe seguire) è dettata dalla disponibilità di tempo. In questo caso io e Olivetta stavamo rientrando in casa piuttosto affamati dopo un ennesimo giro di incombenze determinate dal cambio di abitazione e abbiamo deciso di sperimentare questo spunto (da Sale&amp;Pepe), utilizzando dei capunti, una pasta pugliese abbastanza simile alle orecchiette.</p>

<p>Mentre i capunti (180gr per due) cuociono, e avendo cura di scolarli ben al dente, soffriggo 100 grammi di filetto di salmone tagliato a dadini in due cucchiai d&#8217;olio per due o tre minuti, poi spengo la fiamma, aggiungo il sedano a dadini (in parti circa uguali al salmone), regolo di sale e di pepe.<br />
In un&#8217;altra casseruola tosto della mollica di pane per due o tre minuti, poi aggiungo un filo d&#8217;olio e lascio sfrigolare per ancora per un minuto, quindi passo sulla carta assorbente per eliminare l&#8217;eccesso d&#8217;olio.</p>
<p>Riaccendo la fiamma sotto il salmone, scolo i capunti al dente e li passo nella padella del salmone dove li salto per un minuto amalgamandoli con il condimento, tolgo dal fuoco, spolvero con la mollica e passo nei piatti.</p>
