			<content:encoded><![CDATA[<p>Prima o poi farò una deviazione, e dedicherò un post all&#8217;argomento delle riviste di cucina, ma intanto ho trovato una vera e propria &#8220;ricetta furba&#8221; su <a href="http://www.mondadori.it/ame/it/gruppo/testate/sa.html">Sale e Pepe</a> e ne ho approfittato per battere sul tempo la pigrizia, sia ai fornelli che sul blog, di questo momento. Questa tagliata si prepara in pochissimi minuti, ed è molto gustosa. La salsa piccante è stata una sopresa: è venuta meno rossa e forse più acidula del previsto per via dei pomodorini ciliegini impiegati, ma io, che di solito non amo salse sulla carne rossa &#8230; stavolta ho dovuto fare uno strappo alla regola.</p>

<p><em>Ingredienti<br />
- una fiorentina da 600 grammi<br />
- per la sua marinatura: un rametto di rosmarino, due cucchiaini di senape piccante, il succo di un limone<br />
- per la salsina piccante: 8 pomodorini ciliegini, tabasco, un peperoncino, un cipollotto bianco, succo di mezzo limone, o un lime<br />

<p><strong>Preparazione</strong></p>
<p>Come primo passo, mi occupo di &#8220;marinare&#8221; la bistecca. In una teglia metto gli aghi del rametto di rosmarino sminuzzati, il succo di un limone e due cucchiaini di senape piccante. Mescolo bene con il cucchiaino diluendo la senape nel succo di limone e raccogliendo tutto il rosmarino. Ora passo la carne nella teglia, la giro e la rigiro, facendo in modo di ricoprirla uniformemente con la marinata ottenuta.</p>

<p>La carne resta nella marinata per 15 minuti, giusto il tempo di preparare la salsa piccante. Metto nel bicchiere del mixer i pomodorini, un peperoncino senza i semi, due gocce di tabasco, il cipollotto e il succo di un mezzo limone. Frullo e quando è omogenea la passo in una ciotolina. Manca ancora qualche minuto di marinatura? Giusto il tempo di mettere sul fuoco la piastra, sulla quale metto una manciata di sale grosso.</p>
<p>Quando la piastra è rovente ci metto sopra la bistecca. Cinque minuti da un lato, cinque dall&#8217;altro. Poi la taglio a fette (di almeno un centimetro di spessore) e la passo nei piatti.</p>

			<content:encoded><![CDATA[<p>Definirla una ricetta mi pare un parolone, ma voglio comunque condividere con voi qualche riga sui miei vasetti di pomodoro secco sott&#8217;olio. Fra i reperti gastronomici estivi c&#8217;erano appunto dei pomodori secchi, oltre ad olio extravergine di oliva e ad una meravigliosa treccia di peperoncini assortiti.</p>
<p>Poi avevo una serie di vasetti Bormioli, comperati mesi addietro con l&#8217;idea di sperimentare una conserva e rimasti in un angolo ad aspettare il loro turno. Nelle ultime ore di vacanza è scattata l&#8217;operazione conserva, e ne sono venuti fuori i vasetti che vedete ritratti.</p>
<p>La lista degli ingredienti è abbastanza naturale:<br />
- pomodori secchi<br />
- olio EEV<br />
- peperoncino, se piace e in base a quanto piace<br />
- aglio (vale la considerazione fatta per il peperoncino)<br />
- basilico, origano (in ogni vasetto o l&#8217;uno o l&#8217;altro).</p>
<p>Aglio peperoncino e basilico (e origano) vanno sminuzzati, tengo da parte un paio di peperoncini e di spicchi d&#8217;aglio interi da utilizzare come (aromatica) decorazione del vasetto. Questa una bella vista sugli ingredienti freschi sminuzzati.</p>

<p>Poi inizia l&#8217;opera di riempimento del vasetto: strato di pomodoro, pizzico d&#8217;aglio a dadini, pizzico di basilico (o di origano).</p>

<p>Proseguo fino al riempimento del vasetto, alternando strati di pomodoro e pizzico di ingredienti. Completato il vasetto inserisco di lato uno degli elementi decorativi (spicchione d&#8217;aglio o peperoncino intero). Questo il risultato.</p>

<p>La fase successiva è la pastorizzazione: immergo in acqua fredda (l&#8217;acqua deve arrivare qualche centimetro sopra al coperchio, e rimanerci durante l&#8217;ebollizione) e porto a bollore, i vasetti restano a sobbollire per 30 minuti e poi li lascio a raffreddarsi nella loro stessa acqua.<br />
Quando sono freddi li estraggo controllando se la loro capsula si è abbassata, se non si è abbassata sarà necessario ripetere la pastorizzazione.</p>

			<content:encoded><![CDATA[<p>Ieri ho finalmente messo al riparo le piante del balcone, qualcuna inscatolata in una piccola &#8220;serra&#8221;, qualcuna incartata per proteggerla dal gelo che è definitivamente in arrivo. Mentre spostavo il tutto ho trovato un bel Jalapeno maturo, che poco dopo si è trasformato in un bel sughetto piccante per delle gustose ciriole.</p>

<p>I pomodori vanno scottati, spellati e privati dei semi. Il cetriolo va privato della buccia, e fatto a pezzi, il cipollotto privato di foglie e radici.</p>
<p>Il pancarrè viene sminuzzato e bagnato con 2 cucchiai d&#8217;aceto.</p>
<p>Ora si passa nel frullatore: tutte le verdure nel frullatore, compreso il peperoncino. Frullare alla massima velocità. Poi si aggiunge il pane, con mezzo bicchiere d&#8217;acqua freddissima, altra frullata alla massima velocità. Ultimo tocco: i due cucchiai di yogurt, un filo d&#8217;olio, e un pizzico di sale.</p>
<p>Va servito molto freddo, un ora di frigo prima di servire è ok, guarnito con qualche dadino di peperone e cetriolo che avrete tenuto da parte durante la preparazione delle verdure.</p>
