			<content:encoded><![CDATA[<p>Ho finalmente trovato, in un negozio <a href="http://www.casashops.com/">Casa</a>, una serie di cocottine (e una fantastica terrina) in svendita. Me le sono aggiudicate per un prezzo veramente micro e ho deciso di metterle subito alla prova con un paio di ricettine, come questi gnocchi ripassati in forno con crema di parmigiano. Li abbiamo mangiati per pranzo, quindi sono riuscito a scattare una foto con luce naturale che, anche grazie al decisivo foodstyling di Olivetta, rende loro davvero onore.</p>

<p><em>Ingredienti<br />
- 500 grammi di gnocchetti<br />
- 50ml di olio extravergine di oliva<br />
- 250ml di panna fresca<br />
- 100gr di parmigiano grattugiato<br />
- 50 grammi di olive nere<br />
- 50 grammi di olive verdi<br />
</em></p>
<p><strong>La preparazione</strong></p>
<p>Verso l&#8217;olio in una ciotola, lesso gli gnocchi, appena galleggiano li metto nella ciotola e mescolo ungendoli uniformemente.</p>
<p>Intanto verso la panna in un pentolino, metto sulla fiamma bassa: appena raggiunge il bollore aggiungo il parmigiano, a poco a poco, mescolando senza interruzioni finchè non comincia a restringere e diventare cremoso. </p>
<p>Tolgo la crema dal fuoco, la verso sugli gnocchi, mescolo bene, aggiungo le olive e mescolo ancora. A questo punto compongo le cocotte, riempiendole in maniera uniforme di gnocchi.</p>
<p>Inforno a 210 gradi, per 12 minuti, nelle cocotte scoperte. Termino la cottura con trenta secondi di grill per dorare la gratinatura e passo nei piatti.</p>

			<content:encoded><![CDATA[<p>La nuova casa sta prendendo forma, ovviamente a partire dalla cucina. Sebbene non sia ancora operativa al 100%, avevo voglia di riprendere un minimo di attività, sfruttando i forni che sono uno dei punti di grande miglioramento rispetto alla dotazione precedente. Per questo ho scartabellato alla ricerca di idee che non richiedessero alcun intervento di padelle e casseruole. Ho trovato diverse possibilità nell&#8217;area delle torte salate, e ho deciso di sperimentare questa che mi ha colpito perchè è estremamente semplice e basata su ingredienti che amo molto. In tutta la ricetta non compare nemmeno un pizzico di sale, perchè tutti gli ingredienti sono molto sapidi.</p>

<p>Impasto &#8220;panoso&#8221;<br />
- 400 grammi di farina 00<br />
- 20 grammi di lievito di birra<br />
- 200 ml d&#8217;acqua<br />
- un cucchiaio d&#8217;olio</p>
<p>Farcitura:<br />
- 300 grammi di olive<br />
- 100 grammi di filetti di alici<br />
- uno spicchio d&#8217;aglio<br />
- una tazzina di capperi<br />
- olio d&#8217;oliva, pepe</p>
<p>Prima di tutto preparo l&#8217;impasto &#8220;panoso&#8221; di base: farina, acqua, lievito, sciolto nei 200 ml di acqua tiepida. Una volta pronta la palla di impasto, la stendo con il matterello dandogli una forma il più possibile rettangolare. La sfoglia così ottenuta va fatta lievitare 30 minuti.</p>
<p>Durante la lievitazione preparo la farcitura: sminuzzo le olive, trituro i filetti di acciughe, trito finemente l&#8217;aglio, sciacquo i capperi. Mescolo tutto questo in una ciotola unendo una generosa macinata di pepe nero e tre cucchiai d&#8217;olio extravergine di oliva.Terminata la lievitazione cospargo la sfoglia di farcia, lasciando liberi i bordi tutt&#8217;attorno.</p>

<p>Quindi arrotolo la pasta per ottenere un  cilindro, infine arrotolo il cilindro per ottenere una sorta di ciambella. Deposito la ciambella sulla placca da forno, usando un foglio di carta da forno, ungo la superficie della ciambella con due cuchiai d&#8217;olio e inforno a 180 gradi per 40 minuti di cottura.</p>

			<content:encoded><![CDATA[<p>Prosegue la fase di bassa intensità culinaria in casa nostra, ma di quando in quando uno spuntino dobbiamo pur farlo, e allora capita che la scelta cada sul filetto di tonno: buono, bello e rapido da preparare. Questa preparazione porta via non più di 10 minuti ed è gustosissima.</p>

ingredienti</em><br />
<em>300 grammi di filetto di tonno<br />
80 grammi olive verdi spezzettate<br />
20 grammi di capperi<br />
mezzo bicchiere di vino bianco<br />
uno spicchio d&#8217;aglio,olio, sale, pepe bianco</em></p>
<p>Soffriggo lo spicchio d&#8217;aglio in tre cucchiai d&#8217;olio, quando è dorato metto a rosolare i filetti di tonno cospargendoli abbondantemente di pepe bianco su entrambi i lati. Quando i filetti sono rosolati da entrambi i lati, sfumo con il vino bianco e aggiusto di sale. Dopo un minuto aggiungo i capperi e le olive e lascio cuocere 5 minuti per far restringere il fondo.</p>

			<content:encoded><![CDATA[<p>Si, l&#8217;ammetto: sto trascurando il blog, ma prometto che è per un motivo nobilissimo e che passato questo periodo di super-impegno anche Saledolce ne beneficierà enormemente. Ieri finalmente è saltato fuori un ritaglio di tempo libero, e così è nata l&#8217;idea di una ricettina veloce, poco impegnativa, ma molto piacevole: questa tartare di filetto di tonno, profumata di agrumi e di olive.</p>

<p>Gli ingredienti (per due):</p>
<p>- 350 grammi di filetto di tonno<br />
- gli spicchi di una arancia pelata a vivo<br />
- un finocchio<br />
- 80 grammi di olive verdi</p>
<p>Per la <em>citronnette</em>:<br />
- uno spicchio d&#8217;aglio schiacciato<br />
- sei cucchiai d&#8217;olio extravergine<br />
- il succo di mezzo limone<br />
- un pizzico di sale, una macinata di pepe bianco<br />
- mezzo cucchiaino di origano e mezzo di erba cipollina</p>
<p>Preparo la citronnette: unisco tutti gli ingredienti, ed  emulsiono l&#8217;olio con il limone, poi e la metto in fresco.</p>

<p>Ora prendo i filetti di tonno, e li sminuzzo, prima in punta di coltello poi finisco l&#8217;opera con la mezzaluna.</p>

<p>Unisco le olive sminuzzate, e la polpa di arancia pelata e vivo e fatta a dadini.</p>

<p>Ora condisco l&#8217;impasto con la citronnette preparata in precedenza, mescolando bene in modo che la salsina raggiunga tutto il preparato. A questo punto aggiungo pepe bianco, dando un altra macinata generosa, e anche un pizzico di sale.</p>

<p>Veniamo al servizio: non avendo uno stampino tondo e basso, con cui ottenere la forma più classica della tartare, ho utilizzato dei bicchieri bassi e larghi: li ho riempiti con l&#8217;aiuto di un cucchiaio, guarniti con alcune striscioline di finocchio e qualche barbina verde.</p>

		<title>Baccalà alla romana</title>

			<content:encoded><![CDATA[<p>Mi ripromettevo da tempo di preparare del baccalà, ma la laboriosa procedura di reidratazione mal si concilia con i miei ritmi. Il supermercato di fiducia mi è venuto in aiuto con un bel filetto di baccalà reidratato, di circa mezzo kilo, pronto per venire cucinato. La preparazione &#8220;alla romana&#8221; viene dal dizionario enciclopedico della Cucina Italiana, che non mi permetterei mai di contraddire, anche se la scelta di ingredienti mi suggerisce più la Sicilia che non la Capitale.</p>

<p>Ingredienti:<br />
500 grammi di baccalà reidratato<br />
5 spicchi d&#8217;aglio<br />
100 grammi di olive denocciolate, miste verdi e nere, un pò sminuzzate<br />
50 grammi di pinoli<br />
50 grammi di uvetta ammollata e strizzata<br />
400  grammi di polpa di pomodoro</p>
<p>Parto dal filettone di baccalà: tolgo la pelle e lo riduco a tranci di circa 8 cm l&#8217;uno. In un tegame faccio dorare 5 spicchi d&#8217;aglio in camicia in un velo d&#8217;olio extravergine di oliva, li tolgo e aggiungo olive, uvetta e pinoli. Lascio insaporire per un minuto, poi aggiungo<br />
la polpa di pomodoro, 400 grammi d&#8217;acqua e lascio sobbollire per 20 minuti.</p>
<p>Mentre il condimento cuoce, passo i tranci di babccalà nella farina e li rosolo per un minuto in una padella con un filo d&#8217;olio. Trascorsi i 20 minuti del condimento, unisco i tranci nello stesso tegame e proseguo la cottura a fuoco moderato per altri 25 minuti, aggiustando di sale. Servo i tranci  generosamente accompagnati dall&#8217;intingolo.</p>

			<content:encoded><![CDATA[<p>Sfornata ieri sera, e assaggiata oggi a fine mattinata, l&#8217;ho ricoperta di critiche e sono già pieno di idee e modifiche che apporterei sia al mix di ingredienti, sia alla modalità operativa. Però va anche detto che, ce ne siamo già spazzolata mezza, segno che in ogni caso anche questo primo esperimento è stato di successo.</p>

<strong>Ingredienti</strong></p>
<p>Per la pasta di pane:<br />
- 300 g. di farina grano duro<br />
- 180 g. farina 0<br />
- 310 ml di acqua<br />
- 12 g. lievito fresco<br />
- un cucchiaino di zucchero<br />
- un cucchiaio abbondante d&#8217;olio<br />
- un cucchiaino di sale</p>
<p>Per la focaccia:<br />
- emulsione olio e acqua<br />
- olive</p>
<p>Prepariamo la pasta di pane (programma impasto, il numero 7 nella mia moulinex), la stendiamo nella teglia (oliata) dove resterà a lievitare per mezz&#8217;ora.</p>
<p>Terminata la lievitazione, stendiamo meglio la pasta ormai cresciuta e disponiamo le olive infilandole nella pasta. A questo punto spennelliamo la superficie con l&#8217;emulsione di acqua e olio, bagnando ben bene.</p>
<p>Cuoce in forno a 220 gradi per 20 minuti circa.</p>

Il filetto di branzino avanzato era pochino per essere cucinato come protagonista ma permetteva di realizzare un altro svelto e gradevole sughetto, così ho provato queste linguine branzino e olive.</p>
<p>Si soffrigge uno spicchio d&#8217;aglio, appena questo è dorato lo si toglie e si fa soffriggere la punta di un peperoncino per qualche secondo. Il peperoncino resta in padella anche quando mettiamo dentro i tocchetti di filetto di branzino a rosolare. Quando questi sono rosolati, aggiungiamo il pelato, aggiustiamo di sale e pepe e facciamo cuocere per 10 minuti. A fine cottura si uniscono le olive.</p>
<p>Nel frattempo si cuociono le linguine, che saranno scolate al dente e condite con il sugo.</p>

<p>Nota bene: io ho fatto alcune semplificazioni, dovute a mancanza di ingredienti e bisogno di fare svelto, che secondo me peggiorano leggermente il risultato. La prossima volta userò:<br />
- olive nere, la ricetta pescata da un libro le voleva nere<br />
- pomodoro fresco a tocchetti, anzichè il pelato</p>
