<p>Non voglio riproporre la ricetta standard, da manuale, ma raccontare l&#8217;interpretazione personale che apprezzo di più. Le dosi sono per due:<br />
taglio a metà un bel limone succoso, mi raccomando uno gustoso, con la buccia bella spessa, e lo spremo.</p>
<p>Verso il succo nello shaker, aggiungo due pizzichi di sale (dolce di Cervia naturalmente) e una macinata di pepe nero. Nella versione alcolica aggiungo vodka in quantità pari al succo di limone, altrimenti passo direttamente al succo di pomodoro: ne stappo due bottigline e le aggiungo.</p>
<p>Mescolo bene, poi aggiungo due schizzi di tabasco, quattro gocce di salsa worcester e mescolo ancora con più energia. Passo nei bicchieri, spolvero ancora di pepe macinato al momento, guarnisco con foglioline di sedano e gusto.</p>

Talmente fotogenica che è stata citata su <a href="http://www.slashfood.com/">slashfood</a>, in questo <a href="http://www.slashfood.com/2009/03/20/tuna-tartare-feast-your-eyes/">articolo</a> che però io riesco a vedere solo grazie alla <a href="http://209.85.129.132/search?q=cache:f5ib6q8sFgAJ:www.slashfood.com/2009/03/20/tuna-tartare-feast-your-eyes/+tuna+tartare+saledolce&amp;cd=3&amp;hl=it&amp;ct=clnk&amp;gl=it">cache di google</a>. Misteri di internet, e dei blog.</p>

<p>Ho deciso di rifarne una a pochi giorni di distanza, ma ho voluto provare a semplificare la preparazione: ho eliminato finocchio ed arancio, inserendo invece il cappero sott&#8217;aceto, passando da un gusto con una forte nota dolce ad un gusto in cui prevale la nota acida.</p>

<p>Gli ingredienti:<br />
- 350 grammi di filetto di tonno, freschissimo<br />
- 80 grammi di olive verdi<br />
- 20 grammi di capperi<br />
- il succo di un limone<br />
- uno spicchio d&#8217;aglio sminuzzato finemente<br />
- un pizzico di sale, una macinata di pepe bianco<br />
- mezzo cucchiaino di origano e mezzo di erba cipollina<br />
- sei cucchiai d&#8217;olio extravergine</p>
<p>La preparazione:<br />
preparo la citronnette unendo sei cucchiai d&#8217;olio extravergine, il succo del limone, un pizzico di sale, la macinata generosa di pepe bianco, l&#8217;aglio sminuzzato, origano e erba cipollina. Emulsiono il tutto con una forchetta e metto in frigo a raffreddare.</p>
<p>Nel frattempo sminuzzo in punta di coltello il tonno, lo rifinisco con la mezzaluna e lo passo in una ciotola dove lo unisco con le olive a pezzi e i capperi, mentre mescolo aggiungo un pizzico di sale e ancora un pò di pepe bianco. Ora condisco con la citronnette e mescolo bene. Quando tutto il preparato è ben condito, riporto in frigo a raffreddare e passo nei piatti (bicchieri nel mio caso) poco prima di consumarla.</p>

			<content:encoded><![CDATA[<p>Si, l&#8217;ammetto: sto trascurando il blog, ma prometto che è per un motivo nobilissimo e che passato questo periodo di super-impegno anche Saledolce ne beneficierà enormemente. Ieri finalmente è saltato fuori un ritaglio di tempo libero, e così è nata l&#8217;idea di una ricettina veloce, poco impegnativa, ma molto piacevole: questa tartare di filetto di tonno, profumata di agrumi e di olive.</p>

<p>Gli ingredienti (per due):</p>
<p>- 350 grammi di filetto di tonno<br />
- gli spicchi di una arancia pelata a vivo<br />
- un finocchio<br />
- 80 grammi di olive verdi</p>
<p>Per la <em>citronnette</em>:<br />
- uno spicchio d&#8217;aglio schiacciato<br />
- sei cucchiai d&#8217;olio extravergine<br />
- il succo di mezzo limone<br />
- un pizzico di sale, una macinata di pepe bianco<br />
- mezzo cucchiaino di origano e mezzo di erba cipollina</p>
<p>Preparo la citronnette: unisco tutti gli ingredienti, ed  emulsiono l&#8217;olio con il limone, poi e la metto in fresco.</p>

<p>Ora prendo i filetti di tonno, e li sminuzzo, prima in punta di coltello poi finisco l&#8217;opera con la mezzaluna.</p>

<p>Unisco le olive sminuzzate, e la polpa di arancia pelata e vivo e fatta a dadini.</p>

<p>Ora condisco l&#8217;impasto con la citronnette preparata in precedenza, mescolando bene in modo che la salsina raggiunga tutto il preparato. A questo punto aggiungo pepe bianco, dando un altra macinata generosa, e anche un pizzico di sale.</p>

<p>Veniamo al servizio: non avendo uno stampino tondo e basso, con cui ottenere la forma più classica della tartare, ho utilizzato dei bicchieri bassi e larghi: li ho riempiti con l&#8217;aiuto di un cucchiaio, guarniti con alcune striscioline di finocchio e qualche barbina verde.</p>

<p>Ingedienti (per i filetti):<br />
- filetti di cernia infarinati<br />
- circa 40 grammi di burro<br />
- un rametto di rosmarino<br />
- il succo di un limone</p>
<p>Come per una qualsiasi &#8220;<a href="http://saledolce.com/2009/01/11/filetti-di-cernia-alla-mugnaia/">mugnaia</a>&#8220;, infarino i filetti, facco sciogliere 40 grammi di burro in una padella bella larga, e rosolo dolcemente i filetti tre minuti per lato.</p>
<p>Appena dorato il secondo lato, bagno i filetti con il succo di un limone spremuto, leggermente allungato con del vino bianco secco.</p>
<p>Completo la cottura, facendo restringere il fondo a fuoco vivace. Quando la quantità di liquido si è dimezzata, rigiro i filetti nel fondo perchè siano ben bagnati e aggiungo degli aghi di rosmarino.</p>
<p>Io ho accompagnato questi filetti con un contorno che a me piace molto, ovvero dei <a href="http://saledolce.com/2008/11/16/pate-di-cannellini/http://saledolce.com/2008/11/16/pate-di-cannellini/">fagioli cannellini conditi con emulsione di olio e limone, sale e aglio sminuzzato</a>.</p>

			<content:encoded><![CDATA[<p>La mugnaia è una preparazione in cui il pesce viene prima infarinato, e poi cotto con burro e limone. Si possono cuocere così tuttì i pesci dalle carni bianche, anche se è la sogliola ad essere tipicamente collegata alla mugnaia. La ricetta si porta dietro anche un abbinamento consigliato, con un contorno molto semplice di piselli passati nel burro. Ho applicato la tecnica a dei filetti di cernia surgelati, ottenendo un risultato molto gustoso che è quello raccontato sotto.</p>

<p>Infarino leggermente i filetti di pesce, aggiungo anche un pizzico di sale e un po&#8217; di pepe. Faccio fondere 40 grammi di burro un una padella ampia abbastanza da contenere bene i filetti e permettermi di girarli agevolmente.</p>
<p>Appena il burro è sciolto adagio i filetti e li faccio cuocere dolcemente 3 minuti per lato, dopo aver dorato il secondo lato irroro i filetti con il succo di un limone spremuto, leggermente allungato con del vino bianco secco.</p>
<p>Completo la cottura a fuoco vivace, fino a quando il liquido non sarà circa la metà, allora completo con del prezzemolo, rigiro nel fondo di cottura e servo ben caldo accompagnando con i piselli al burro.</p>

			<content:encoded><![CDATA[<p>A volte le cose migliori vengono fuori dalla necessità, e magari anche dal poco tempo.<br />
E&#8217; proprio il caso di questo patè di fagioli cannellini: con alcune fette di ciambella di semola, è diventato una deliziosa <em>tapa</em> di quelle che mi fanno compagnia mentre cucino.</p>

<p>Ingredienti:<br />
- una scatola di fagioli cannellini<br />
- un dentre d&#8217;aglio, sminuzzato finissimo<br />
- un filo d&#8217;olio, meglio due.;)<br />
- un ciuffetto di prezzemolo<br />
- il succo di mezzo limone</p>
<p>Metto l&#8217;olio sul fondo di una ciotola, aggiungo l&#8217;aglio e i cannellini, mescolando bene. Ora acidulo con il succo di limone e infine decoro con un pizzico di prezzemolo sminuzzato.</p>

<p>Per finire riduco il tutto in crema utilizzando il frullatore ad immersione. Alcuni fagioli interi, o pezzettoni meno regolari, non pregiudicano la qualità del prodotto, anzi lo rendono più gustoso.</p>

			<content:encoded><![CDATA[<p>La ricetta viene da <a href="http://www.jamieoliver.com/">Jamie Oliver</a>, in particolare dal bellissimo <a href="http://www.anobii.com/books/Jamies_Italy/9780718147709/00e8daedfa33f2c9b4/">Jamie&#8217;s Italy</a> che vi straconsiglio. Anche il titolo del post è un pò rubato da lui. Jamie la propone come ricetta a base di tonno fresco, racconta di averle assaggiate in Sicilia come ricetta di tonno e spada, io mi sono permesso (complice la momentanea indisponibilità di tonno presso il mio supermercato di riferimento) di adattarla come ricetta di pesce spada.</p>

<p>La ricetta si compone di due parti: una salsa di accompagnamento alle polpette, e le polpette stesse.</p>
<p><strong>La vellutata</strong><br />
Partiamo dalla salsa che è semplicissima: in abbondante olio di oliva, si prepara un soffritto per 4 spicchi d&#8217;aglio e una cipollina tritata finemenete. Dopo una decina di minuti di delicata soffrittura si aggiungono due vasotti di pomodoro pelato, ma anche una bella macinata generosa di pepe nero, sale e un cucchiaino di origano. Una bella mescolata e la salsa resta a sobbollire per 15 minuti, quando è pronta la trasformiamo in vellutata usando il frullatore ad immersione. Jamie nel finale della preparazione la corregge di sale e aggiunge dell&#8217;aceto di vino rosso, io ho preferito passare, perchè sul pesce spada la preferivo più delicata.</p>
<p><strong>Le polpette</strong><br />
Ingredienti per le polpette:<br />
- 400 grammi di pesce spada, tagliato a dadotti di 1 cm di lato<br />
- 50 grammi di pinoli<br />
- 1 cucchiaino di cannella macinata<br />
- 1 cucchiaino di origano<br />
- 1 ciuffo di prezzemolo fresco tritato, solo le foglie<br />
- 100 gr di pangrattato<br />
- 50 grammi di parmigiano grattugiato<br />
- 2 uova<br />
- il succo di un limone, la sua scorza grattugiata</p>
<p>Per prima cosa prendiamo una padella, ci versiamo due cucchiaiate d&#8217;olio e ci soffriggiamo il pesce a dadini, mescolato con i pinoli e profumato con la cannella. Condiamo con un poco di sale e una macinata di pepe.</p>

<p>Appena il pesce è cotto e i pinoli tostati, passiamo in una terrina dove lasciamo raffreddare per qualche minuto.<br />
Appena è freddo incorporiamo:<br />
- il cucchiaino di origano<br />
- il prezzemolo, tenendone da parte pochissimo per la guarnitura<br />
- il pangrattato<br />
- il parmigiano<br />
- il succo e la scorza del limone<br />
- le due uova</p>

<p>Lavoriamo con le mani arrivando a preparare un certo numero di polpette, grandi come palline da golf. Se il composto è troppo colloso, aggiungete una passata di pangrattato. Le polpettine così fatte vanno lasciate riposa un poco, circa un&#8217;ora è l&#8217;ideale, in frigo.</p>

<p><strong>Il gran finale in cui polpette e vellutata si incontrano</strong></p>
<p>Rimettiamo sul fuoco la padella in cui abbiamo soffritto il tonno, aggiungendo olio. Appena caldo l&#8217;olio, facciamo saltare le polpette per qualche minuto, appena iniziano a dorarsi le distribuiamo nei piatti guarnendo con la vellutata di pomodoro e il prezzemolo lasciato da parte.</p>

<p>Il risultato è stato fantastico, la nota vincente quella di limone e cannella.</p>

			<content:encoded><![CDATA[<p>Come dicevo, covavo una certa voglia di risotto da settimane. Allora ho replicato, provando questa ricetta decisamente tendente alla dolcezza.</p>

<p> Gli ingredienti:</p>
<p>- 160 g riso Carnaroli<br />
- 3 amaretti, sbriciolati con le mani<br />
- brodo di carne<br />
- uno scalogno<br />
- 20 gr di burro e un filo d&#8217;olio<br />
. mezzo bicchiere di vino bianco<br />
- due cucchiaiate di panna<br />
- parmigiano grattugiato<br />
- scorza di limone tritata e a listarelle, per la decorazione</p>
<p>La prima parte è quella di ogni risotto:scalogno imbiondito in burro e olio, riso nella padella a tostarsi finchè non è dorato, sfumiamo con il mezzo bicchiere di vino bianco. Il risotto va portato a cottura a fuoco medio, aggiungendo un mestolo di brodo per volta, avendo cura di tenerlo sempre coperto.</p>
<p>Quando il riso è quasi pronto si incorpora la panna, e il trito di limone. A questo punto si spegne la fiamma e si incorporano anche gli amaretti, con il parmigiano reggiano grattugiato.</p>
<p>Dopo due minuti di riposo il risotto va impiattato, usando un pò di amaretto sbriciolato e la scorza di limone a listarelle come descorazione.</p>
