			<content:encoded><![CDATA[<p>Era ora di risvegliare il blog, che se ne era stato assopito per tutto il mese di agosto, e il mio frigo era ingombro di seppie: le due cose non potevano non produrre almeno un paio di post sul tema. Una nota: le seppie che albergavano nel mio frigo erano da pulire, dovendo cimentarsi nell&#8217;impresa questa valida <a href="http://www.lospicchiodaglio.it/index.php?sez=rubriche&#038;azione=come&#038;idr=362">guida passo passo</a> può essere di grandissimo aiuto.</p>

<p><em>Ingredienti:<br />
- Quattro seppie pulite, e i loro tentacoli<br />
- Un panino<br />
- Due filetti di acciuga<br />
- Due cucchiaini di capperi<br />
- uno spicchio d&#8217;aglio<br />
- Un ciuffetto di prezzemolo<br />
- Un uovo<br />
- 30 grammi di pecorino grattugiato<br />

<p><strong>La preparazione</strong></p>
<p>Metto nel mixer la mollica del panino, i tentacoli della seppia, il pecorino, l&#8217;uovo, i capperi, l&#8217;aglio il prezzemolo e il filetto di acciuga tritando fino ad ottenere la consistenza desiderata per il ripieno.</p>
<p>Poi passo a riempire le seppie come nel caso delle <a href="http://www.saledolce.com/2008/03/23/seppie-ripiene-al-forno/">seppie ripiene al forno &#8220;tradizionali&#8221; di saledolce</a>, e le chiudo utilizzando la tecnica degli stuzzicadenti.</p>
<p>Ungo una teglia, ci dispongo sopra le seppie ripiene e sigillate, le spolvero di sale, di pepe e le irroro con un filo d&#8217;olio. Quindi copro la teglia con un foglio di carta stagnola e passo nel forno a 180 gradi per 35 minuti. </p>

			<content:encoded><![CDATA[<p>Ieri piccola sessione di cucina in parallelo, mentre io provavo a venire a capo di una terrina, Olivetta si esibiva in questi riuscitissimi muffin salati, realizzati a base di <a href="http://saledolce.com/2008/10/13/lo-yogurt-fatto-in-casa/">yogurt casalingo</a>.</p>

<p><em>Ingredienti:<br />
farina 00 120 grammi<br />
3 fettine di prosciutto<br />
3 uova<br />
yogurt intero 60 gr<br />
mezza bustina lievito in polvere<br />
semi di finocchio<br />
pepe<br />
olio due cucchiai<br />
sale</p>
<p>Mascarpone, capperi, salee foglioline di valeriana per la cremina.<br />
</em></p>
<p>Olivetta impasta lo yogurt con le uova, aggiunge la farina e il lievito, l&#8217;olio e un pizzico di sale. Aggiunge una manciata abbondante di semi di finocchio e due macinate generose di pepe. Mescola fino a raggiungere la consistenza di una crema.</p>
<p>Imburra la placca da sei muffin, riempe ogni stampo per due terzi e inforno a 180 gradi per 12 minuti. Sforna i muffin, li lascia raffreddare per qualche minuto e poi li rovescia su un piatto.</p>
<p>Prepara la crema per farcirli: mescola tre cucchiaiate di mascarpone con un pizzico di sale e una manciata di capperi. Poco prima di portare in tavola, apre i muffin tagliando la parte superiore, mette una fogliolina di valeriana, una fettina di prosciutto e con la siringa da pasticcere farcisce con la crema al mascarpone, poi richiude la parte superiore senza premere troppo.</p>

			<content:encoded><![CDATA[<p>La nuova casa sta prendendo forma, ovviamente a partire dalla cucina. Sebbene non sia ancora operativa al 100%, avevo voglia di riprendere un minimo di attività, sfruttando i forni che sono uno dei punti di grande miglioramento rispetto alla dotazione precedente. Per questo ho scartabellato alla ricerca di idee che non richiedessero alcun intervento di padelle e casseruole. Ho trovato diverse possibilità nell&#8217;area delle torte salate, e ho deciso di sperimentare questa che mi ha colpito perchè è estremamente semplice e basata su ingredienti che amo molto. In tutta la ricetta non compare nemmeno un pizzico di sale, perchè tutti gli ingredienti sono molto sapidi.</p>

<p>Impasto &#8220;panoso&#8221;<br />
- 400 grammi di farina 00<br />
- 20 grammi di lievito di birra<br />
- 200 ml d&#8217;acqua<br />
- un cucchiaio d&#8217;olio</p>
<p>Farcitura:<br />
- 300 grammi di olive<br />
- 100 grammi di filetti di alici<br />
- uno spicchio d&#8217;aglio<br />
- una tazzina di capperi<br />
- olio d&#8217;oliva, pepe</p>
<p>Prima di tutto preparo l&#8217;impasto &#8220;panoso&#8221; di base: farina, acqua, lievito, sciolto nei 200 ml di acqua tiepida. Una volta pronta la palla di impasto, la stendo con il matterello dandogli una forma il più possibile rettangolare. La sfoglia così ottenuta va fatta lievitare 30 minuti.</p>
<p>Durante la lievitazione preparo la farcitura: sminuzzo le olive, trituro i filetti di acciughe, trito finemente l&#8217;aglio, sciacquo i capperi. Mescolo tutto questo in una ciotola unendo una generosa macinata di pepe nero e tre cucchiai d&#8217;olio extravergine di oliva.Terminata la lievitazione cospargo la sfoglia di farcia, lasciando liberi i bordi tutt&#8217;attorno.</p>

<p>Quindi arrotolo la pasta per ottenere un  cilindro, infine arrotolo il cilindro per ottenere una sorta di ciambella. Deposito la ciambella sulla placca da forno, usando un foglio di carta da forno, ungo la superficie della ciambella con due cuchiai d&#8217;olio e inforno a 180 gradi per 40 minuti di cottura.</p>

Talmente fotogenica che è stata citata su <a href="http://www.slashfood.com/">slashfood</a>, in questo <a href="http://www.slashfood.com/2009/03/20/tuna-tartare-feast-your-eyes/">articolo</a> che però io riesco a vedere solo grazie alla <a href="http://209.85.129.132/search?q=cache:f5ib6q8sFgAJ:www.slashfood.com/2009/03/20/tuna-tartare-feast-your-eyes/+tuna+tartare+saledolce&amp;cd=3&amp;hl=it&amp;ct=clnk&amp;gl=it">cache di google</a>. <p>Ho deciso di rifarne una a pochi giorni di distanza, ma ho voluto provare a semplificare la preparazione: ho eliminato finocchio ed arancio, inserendo invece il cappero sott&#8217;aceto, passando da un gusto con una forte nota dolce ad un gusto in cui prevale la nota acida.</p>

<p>Gli ingredienti:<br />
- 350 grammi di filetto di tonno, freschissimo<br />
- 80 grammi di olive verdi<br />
- 20 grammi di capperi<br />
- il succo di un limone<br />
- uno spicchio d&#8217;aglio sminuzzato finemente<br />
- un pizzico di sale, una macinata di pepe bianco<br />
- mezzo cucchiaino di origano e mezzo di erba cipollina<br />
- sei cucchiai d&#8217;olio extravergine</p>
<p>La preparazione:<br />
preparo la citronnette unendo sei cucchiai d&#8217;olio extravergine, il succo del limone, un pizzico di sale, la macinata generosa di pepe bianco, l&#8217;aglio sminuzzato, origano e erba cipollina. Emulsiono il tutto con una forchetta e metto in frigo a raffreddare.</p>
<p>Nel frattempo sminuzzo in punta di coltello il tonno, lo rifinisco con la mezzaluna e lo passo in una ciotola dove lo unisco con le olive a pezzi e i capperi, mentre mescolo aggiungo un pizzico di sale e ancora un pò di pepe bianco. Ora condisco con la citronnette e mescolo bene. Quando tutto il preparato è ben condito, riporto in frigo a raffreddare e passo nei piatti (bicchieri nel mio caso) poco prima di consumarla.</p>

			<content:encoded><![CDATA[<p>Prosegue la fase di bassa intensità culinaria in casa nostra, ma di quando in quando uno spuntino dobbiamo pur farlo, e allora capita che la scelta cada sul filetto di tonno: buono, bello e rapido da preparare. Questa preparazione porta via non più di 10 minuti ed è gustosissima.</p>

ingredienti</em><br />
<em>300 grammi di filetto di tonno<br />
80 grammi olive verdi spezzettate<br />
20 grammi di capperi<br />
mezzo bicchiere di vino bianco<br />
uno spicchio d&#8217;aglio,olio, sale, pepe bianco</em></p>
<p>Soffriggo lo spicchio d&#8217;aglio in tre cucchiai d&#8217;olio, quando è dorato metto a rosolare i filetti di tonno cospargendoli abbondantemente di pepe bianco su entrambi i lati. Quando i filetti sono rosolati da entrambi i lati, sfumo con il vino bianco e aggiusto di sale. Dopo un minuto aggiungo i capperi e le olive e lascio cuocere 5 minuti per far restringere il fondo.</p>
