<p>Quel mai, tecnicamente è sbagliato. C&#8217;è una antica ricetta <a href="http://saledolce.com/2008/03/02/sarago-al-sale/">di Sarago al sale</a>, ma non c&#8217;è <a href="http://saledolce.com/cosa-e-saledolce/">testo</a>, le fotine sono due in croce <a href="http://saledolce.com/cosa-e-saledolce/">prese con il cellulare</a>, e da quel che posso vedere il sale di quella ricetta non era profumato in alcun modo. Insomma, consideriamo questa come la prima vera preparazione al sale su saledolce.</p>
<p>Le ispirazioni da cui sono partito sono fondamentalmente due: le ricette al sale profumato (da <a href="http://www.anobii.com/books/Jamies_Italy/9780718147709/00e8daedfa33f2c9b4/">Jamie&#8217;s Italy</a>) nelle quali la crosta di sale viene arricchita e profumata da buccia di agrumi, e questa bella <a href="http://lapiccolacasa.blogspot.com/2008/10/la-ricetta-della-cernia-in-crosta-di.html">ricetta di cernia</a> (da La piccola casa, uno dei foodblog che seguo con più piacere). Nel secondo caso la crosta di sale viene profumata con erbette aromatiche.</p>
<p>Ma vieniamo ai nostri branzini. La ricetta come è ovvio che sia è molto semplice.</p>
<p>Preparo i due branzini, li eviscero (meglio sarebbe farlo con la tecnica che non prevede di aprirne il ventre, io purtroppo non ne sono capace) e ne riempio la cavità addominale con un trito di aglio, prezzemolo e limone.</p>
<p>Visto il peso e la dimensione dei branzini (e della teglia) preparo due kilogrammi di sale ai quali unisco circa 60 grammi di trito aromatico (salvia, prezzemolo, origano, maggiorana e alloro) e un bicchiere d&#8217;acqua. Con l&#8217;impasto leggermente umido copro prima il fondo della teglia, poi i due branzini.</p>
<p>Inforno la teglia a 180 gradi per 25 minuti. Al termine della cottura il sale ha formato una crosta dura, che rompo prima di portare in tavola il pesce.</p>

		<title>Linguine con branzino e olive</title>

			<content:encoded><![CDATA[<p>L&#8217;altra sera, quando ho provato a realizzare le linguine al ragù bianco di branzino ho leggermente esagerato con la quantità di branzino. Il filetto di branzino avanzato era pochino per essere cucinato come protagonista ma permetteva di realizzare un altro svelto e gradevole sughetto, così ho provato queste linguine branzino e olive.</p>
<p>Si soffrigge uno spicchio d&#8217;aglio, appena questo è dorato lo si toglie e si fa soffriggere la punta di un peperoncino per qualche secondo. Il peperoncino resta in padella anche quando mettiamo dentro i tocchetti di filetto di branzino a rosolare. Quando questi sono rosolati, aggiungiamo il pelato, aggiustiamo di sale e pepe e facciamo cuocere per 10 minuti. A fine cottura si uniscono le olive.</p>
<p>Nel frattempo si cuociono le linguine, che saranno scolate al dente e condite con il sugo.</p>

<p>Nota bene: io ho fatto alcune semplificazioni, dovute a mancanza di ingredienti e bisogno di fare svelto, che secondo me peggiorano leggermente il risultato. La prossima volta userò:<br />
- olive nere, la ricetta pescata da un libro le voleva nere<br />
- pomodoro fresco a tocchetti, anzichè il pelato</p>

due filetti di branzino, ridotti a piccoli pezzi<br />
mezzo litro di brodo di pesce<br />
quattro fiori di zucca, privati del pistillo e spezzettati<br />
aglio, un dente<br />
curry, mezzo cucchiaino<br />
quattro gherigli di noce tritati</p>
<p>Rosoliamo il dente d&#8217;aglio per due minuti, lo togliamo,poi aggiungiamo il branzino e i fiori di zucca. Sfumiamo con un mestolo di brodo, aggiungiamo il curry. Lo cuociamo 10 minuti a fuoco medio, se il brodo tende ad asciogare ne agiungiamo ancora un pochino.</p>
<p>Intanto lessiamo le linguine al dente, alla fine scoliamo, passiamo le lingine nella padella del branzino, mescoliamo a fuoco spento.</p>
<p>Nel piatto, guarniamo con quello che resta del ragù bianco di branzino, e spolveriamo con le noci tritate.</p>
